2021 Borachio, Savagnin
Savagnin cultivated in deep sand from a wild site. The grapes are directly pressed into barrels for fermentation, then rested for a year before spending another eight months in tank prior to bottling in September 2022. This wine is linear and salty, rich in the right places, with excellent length. While it's fantastic with oysters, it deserves time to be savoured on its own as it has much to reveal. This wine is truly unique.
