2023 Elm, 'Bomba Bianco' Pinot Blanc & Malvasia
Despite a challenging growing season before the 2023 harvest, the scenic vineyard by the Ovens River yielded exceptional fruit. A blend of Pinot Bianco (48%), Malvasia Istriana (37%), and Friulano (15%) was hand-picked, de-stemmed, and inoculated with non-saccharomyces yeast on-site for protection. After cooling for 48 hours, the grapes were pressed into barrels and tanks, fermented wild, and aged for 9 months with bâtonnage in French and Hungarian oak. The wine was then racked, fined, filtered, and bottled in February 2024.

ELM wines pay tribute to the upbringing Madeleine and her two sisters, Emily and Laura (hence ELM), had in the Yarra Valley and Heathcote, where winemaking and the traditions of the Italian family table were strongly held.
